Happy Easter!

Today we set up shop downtown Clinton, IA. We chose “Clinton Park” to honor our town Firemen with some free tacos and see a different locale.

This week’s Chef Special: Hand breaded, made to order: Baja Style crispy fish tacos. (Pickled radish slaw, crunchy carrots, lime crema. Cotija, roasted red pepper and jalapeno lime sauces.)

I would like to personally thank everyone who stopped by to see us. We were able to surprise many of our patrons with a free sample of a classic food truck/Mexican snack, the churro!

I’m currently working on a new version that we have fondly nicknamed, “the choux-ro”.
